My earliest food memories are of the food markets of Singapore and Malaysia; they were full of produce I had never seen before.

Food that’s trending for me is locally produced. I want to see its origin on labels in shops and restaurants.

My favourite place to eat is The Queen’s Head in East Clandon, near Guildford, and my most memorable meal is eating barbecued chicken on Airlie Beach, Queensland. My ideal dinner guests would be Stephen Mangan, Kirsty Young and Bill Nighy.

Cookbook inspiration always comes from Delia Smith. She was recently voted the author of the best cookbook ever published.

The three items I always keep in my fridge are butter, Sauvignon Blanc and pancetta.
