Ingredients

  • 2 thick slices of sourdough bread
  • 80g mincemeat
  • 70g stilton
  • 40g grated cheddar cheese
  • 40g salted butter

This mincemeat and stilton sourdough toastie is not only a great flavour combination, but is also the little extra trick to make this truly worthy of any household at Christmas. If blue cheese isn’t your thing then don’t worry , you can just swap it out for any cheese you like but might need to add a pinch more salt .

Method

  • Pre-heat the oven to 180º C
  • Butter the bread on both sides then spread the mincemeat evenly on one side of the bread
  • Crumble the stilton evenly over the mincemeat
  • Place the other slice of bread on top to make a sandwich
  • Put a heavy based frying pan on a medium heat
  • Place some parchment paper in the frying pan, then add the gated cheddar cheese on to the paper, once the cheese has started to melt place the sandwich on to the melted cheese, once it’s well coloured on one side flip the sandwich over and place the sandwich, still in the pan, into the oven for 10 minutes.
  • Remove the pan and sandwich from the oven and leave to cool a little before serving.
